Structural Glycomics
Structural glycomics examines the immense structural diversity of complex carbohydrates and glycans released from glycoproteins. Because over 70% of functional proteins undergo glycosylation, profiling glycan microheterogeneity is essential for understanding cellular communication, immune response, and pathological alterations.
Our structural workflows employ multi-stage tandem mass spectrometry (MS/MS), hydrophilic interaction liquid chromatography (HILIC), and fluorescence detection to map glycan branching, linkage specificities, and isomeric conformations.
Food & Agricultural Analytics
Food and agricultural analytics applies omics strategies to evaluate the biochemical composition, authenticity, and nutritional quality of dairy products, functional foods, and agricultural matrices.
By profiling milk whey proteins, bioactive oligosaccharides, and fermentation dynamics using high-resolution mass spectrometry, our group contributes to the advancement of next-generation functional foods and quality authentication protocols.
